About serving puffer fish

The puffer fish has a round body, a big belly and a small tail. There are bright stripes or colors on the back, and the body surface is scaleless, smooth or prickly.

Almost all species of puffer fish contain tetrodotoxin (TTX), which mainly exists in gonads, liver, spleen, eyes, skin, blood and other parts of puffer fish. Ovary and liver are more toxic, followed by kidney, blood, eyes, gills and skin, while testicles and meat are less toxic or non-toxic.

Tetrodotoxin is relatively stable and is not easily eliminated by salting, sun exposure and general heating cooking. Fishermen remove the toxic parts of internal organs, skins and heads before processing, wash blood stains, or cook for a long time, or pickle them for consumption. If a link is not carefully operated, the toxin will attack quickly and generally cannot be rescued.
