Three representative dishes of Sichuan cuisine: Maoxuewang, kung pao chicken and Couple's Lung Slices.

1, Maoxuewang

Mao's history can be traced back to the 1980s. At that time, a chef invented a circle hot pot, accompanied by hairy belly, blood tendons and other hot pot ingredients.

In order to increase the spicy taste and flavor, he added spices such as pepper, pepper and sesame oil, thus creating a unique taste of Maoxuewang. With the passage of time, this hot pot dish has gradually evolved into a popular Maoxuewang after decades of evolution.

2. kung pao chicken

The origin of this dish is related to diced chicken with sauce in Shandong cuisine and diced chicken with pepper in Guizhou cuisine. Later, it was improved and developed by Shandong Governor and Sichuan Governor Ding Baozhen in Qing Dynasty, and a new dish, kung pao chicken, was formed, which was circulated and summarized as Beijing court cuisine. Later, kung pao chicken also spread abroad.

Kung pao chicken takes chicken as the main ingredient, supplemented by peanuts, peppers and other accessories. Red but not spicy, spicy but not fierce, spicy but not spicy, and the meat is smooth and crisp; Its entrance is fresh and spicy, and the tenderness of chicken can be comparable to the crispness of peanuts.

3. Husband and wife lung slices

According to legend, this dish was sold by Guo Minghua and his wife in Chengdu in the 1930s. Because of its fine production and unique flavor, it is deeply loved by the masses, hence the name "Couple Lung Tablets". Later, beef and beef offal were used to replace the original lungs, and the quality was further improved. In order to maintain the original flavor, the name "Husband and wife lung slices" has been used ever since, and it is one of the famous Sichuan dishes.

The history of husband and wife lung films

According to legend, at the end of the Qing Dynasty, there were many vendors selling cold lung slices in the streets and lanes of Chengdu. Cheap offal of beef offal is washed and pickled, sliced, and mixed with soy sauce, red oil, pepper, pepper noodles and sesame noodles. Unique flavor, low price, especially popular with rickshaw pullers, porters and poor students.

In 1930s, Chengdu native Guo Chaohua and his wife made and sold cold lung tablets together. The couple personally operated, walked the streets and sold baskets. Because the leftover materials from beef shops are used as ingredients, they are cheap and delicious, and they are very popular.

People call this cold beef offal "husband and wife leftovers". Because the word "waste" is not pleasant to hear, and there are beef lung slices in the ingredients, the homonym "lung" of "waste" is taken and renamed as "husband and wife lung slices" Later, they found that the beef lungs tasted bad, so they cancelled them.

1933, Mr. and Mrs. Guo opened a shop for sale near Chengdu Banbian Bridge (now on the right side of the back door of People's Park). The name of the store was officially named "Husband and Wife Lung Tablet", and the plaque was inscribed by calligrapher Zhao Yunyu. After several changes, the store moved to Fuyin West Street, a downtown street, expanding its business scale and adding beef noodles. Diners can not only taste lung slices, but also eat pasta to satisfy their hunger.

After the founding of New China, during the period of public-private partnership, the couple's lung slice shop, like other traditional restaurants, was merged into state-owned units. After several generations of efforts, the couple's lung slices have become a famous cooked food takeaway shop at home and abroad.
