How to prepare Thai ruby syrup?

Materials: Ruby material: water chestnut 10 edible red pigment, rose syrup 200ml (which can be replaced by honey), cassava flower 200mg, syrup material: 3 drops of vanilla essence, sugar 250g, water 250ml, coconut milk material: concentrated coconut milk 350ml,12 teaspoons of water.

working methods

(1) Make syrup, and let it cool: pour 250 ml of clear water into the pot, pour in soft sugar, stir well, then pour in 3 drops of vanilla essence, turn off the heat after all the soft sugar is dissolved, and pour out to cool for later use.

(2) Make coconut milk and let it cool: pour 350 ml of clear water into the pot, then pour 350 ml of concentrated coconut milk and 1/2 teaspoons of salt, stir well and boil, then pour out and let it cool for later use.

(3) making rubies:

1, take a large bowl, pour a proper amount of water and 3 drops of food coloring into the bowl, and stir well for later use.

Peel the water chestnut, clean it and cut it into small particles, then rinse it with clear water to remove starch impurities, then take it out and soak it in the just-prepared red water for about 10 minute for dyeing, then take it out and drain it, and then pour it into rose syrup (if it doesn't work, you can use honey mixture 1 drop of pigment instead) until the water chestnut particles are completely wrapped.

3. Pour 1 liter of water into the pot and bring to a boil. After the water is boiled, gently add water chestnut grains wrapped in cassava powder to boil. When all the water chestnuts float on the water, take them out, rinse them with water and drain them, and then put them into the prepared syrup.

(4) Making sago dew: pour 1 liter of water into a pot and boil it. After the water is boiled, pour in sago and cook for about 8 minutes until there is only a small white spot in the middle of sago. After turning off the fire, cover the pot and stew for 5 minutes. Then take out the sago, rinse it with clear water and drain it.

(5) Combination: Ruby and coconut milk are usually added to shaved ice, but my shaved ice machine is too difficult to use, so I replaced shaved ice with iced sago and poured coconut milk and ruby on sago.
