3. Rub the meat strips with white wine first, then rub the whole meat with spice salt, put it neatly into a big pottery jar or basin, put some onion and ginger on the meat strips, marinate for 2-3 days, and then pour out the marinated juice. 4. Punch a hole in one end of the meat strips with a sharp knife, then put on a rope, hang them one by one and put them in the shade for a day to make their surfaces drier.

5. Take a large pot, pour a bottle of yellow rice wine, a bottle of soy sauce, a bottle of soy sauce, and half a catty of white sugar, then add some onion ginger, dried red pepper, pepper and cinnamon, and boil them together until they are saccharified. Continue to cook for about 5 minutes, turn off the heat, take out onion ginger, and then let them cool to make sauce water.

6. Take out the dried meat strips in step 4, put them in a big pot, pour the sauce water cooked and cooled in step 5, marinate for about 3 days, take them out and hang them in a cool and ventilated place for 1-2 weeks.
