Out of the saucepan, pour enough boiling water into the saucepan, then add the fried mutton pieces, then boil the water with high fire, then skim all the floating foam on the water surface with a spoon (this step is also very important and can't be saved, which will be explained later), after skimming, add the shredded ginger, close the lid and turn to low heat to continue stewing for one and a half hours.

Step four? Code bowl with soup? After the mutton soup is stewed, if there is floating foam on the surface, remove the mutton and put it in a bowl for later use. Take an edible bowl, add 1 chopped coriander, 1 chopped leek, appropriate amount of salt, a little pepper, appropriate amount of mutton slices, then pour a spoonful of stewed mutton soup into the bowl with a spoon, stir well with chopsticks, and stew the mutton soup.
