In order to remove the smell of nitrate, it was soaked in clear water for many times in a row, then boiled in a boiling water pot and fished out. Then, he put the pig's hoof into the pot, and added onion, ginger, pepper, fennel and cinnamon to stew at high temperature, in order to remove the toxicity and odor. Unexpectedly, after the onion was boiled for half an hour, there was an abnormal fragrance, which tasted delicious and had no odor. Since then, the shopkeeper has used this method to make "nitrate meat", and more and more customers come to taste it, which soon became famous in the city. Later, due to the similar pronunciation of nitrate and food, it was renamed "Crystal Food Meat". Also, because of the bright red meat color and glittering and translucent skin color, it is also called crystal dish hoof. This dish is made of pig's trotters as raw materials, pickled with nitrate and salt, mixed with onion, ginger, yellow wine and other condiments, simmered in wide soup until crisp and rotten, and then frozen and coagulated. It has the characteristics of beautiful shape, mellow and fresh fragrance, smooth oil, fat but not greasy, and is a traditional flavor dish in Zhenjiang area
