1, spring tea picking time
The picking time of spring tea is from late March to mid-May of that year. At this time, after half a year of cultivation, the quality of spring tea is better.
2, summer tea picking time
The picking time of summer tea is from early May to early July. At this time, the summer weather is hot, and the new shoots and leaves of tea trees grow rapidly, but the taste is bitter.
3, autumn tea picking time
When autumn tea is picked, the weather is cooler and the tea smells better, and the time is better after mid-August.
4. Tea picking time in winter
After autumn tea picking, the temperature gradually dropped, and winter tea picking was made in the late period of 10.
Although reasonable picking should be coordinated with various picking methods, the following basic requirements must be observed:
1. Combination of harvesting and reproduction
Tea is planted to harvest new shoots and leaves of tea trees, which are organs for tea trees to grow, manufacture and accumulate nutrients. Therefore, when picking tea leaves, we must pay attention to proper storage to ensure that a certain number of new leaves remain on the tree. Excessive picking will affect the normal growth of tea trees.

3. It should be adapted to the tree, the place and the time.
Because of the different types of tea, the requirements for picking fresh leaves are different. At the same time, the growth and development of different tea varieties, different tree ages, different geographical environments and climatic conditions are also inconsistent. Therefore, reasonable picking must be flexibly mastered according to the specific local conditions at that time.
Picking methods can be divided into manual picking and mechanical picking, and manual picking is the most common and ancient.
(1) Finger flick: commonly used when picking fine buds, it is the most delicate picking method. Pick new shoots with the fingertips of your thumb and forefinger, and use force when using your fingertips.
(2) Straight picking is also called grasping: hold the branch with the left hand, put the index finger of the right hand near the tea bud, and then hold the tea bud with the thumb, so that between the two fingers, the index finger is strong and the thumb is weak. When the forefinger exerts upward force, the tea leaves will break and fall into the palm, and those who exert downward force will easily hurt the tree. This method is very common.
(2) Folding or picking with both hands: Huizhou is commonly known as Japanese climbing picking. Hold the twig with the first section of thumb and forefinger, and fold it up or down, and the twig will break at the folded place. This method is feasible for picking with both hands.
(3) Pick with nail clippers, and only pick the buds that are growing too fast.
(5) Contrary to the direct picking method, the palm is downward, the thumb is inward, and after being close to the tea bud, press with the index finger, and the thumb focuses on picking downward.
(6) Picking is an extensive picking method, which is carried out at the end of picking or before pruning. In order to facilitate right-handed picking, first insert the left hand into the gap between tea buds, and pick tea buds with the thumb and forefinger of the right hand.
(7) Picking by hand is the worst picking method. Hold the tea branch with one hand and pull it up with the other hand, or pull it down from the branch, regardless of the tender tea of the old branch.
(8) Bud picking is also called old and tender picking. When the tea buds grow to three or four leaves, pick the third and fourth leaves, and pick the rest after the buds grow.
