I heard that the market opened at five o'clock, and we arrived at four o'clock, preparing to scout the environment and find the target vendor in advance, but the streets of Wenxing Street were empty at dusk. It turns out that the bosses are waiting by, and the mobile booths are lined up in the open space in front of the surrounding houses, just like the F 1 sports car waiting for the green light "start" signal on the track.
I didn't check Beijing standard time synchronously, and I didn't hear a gunshot, but "drivers" invariably "started the engine" and "stepped on the gas pedal". The inspiration of the name is undoubtedly Lu Xun's Kong Yiji. While waiting, he asked the boss if Shaoxing stinky tofu. Seeing that other customers had just left, he quietly but frankly replied "yes, but not authentic".
"Not authentic" is the truth. Most of the stinky tofu in domestic night markets is stinky tofu in Changsha (a Wenheyou old Changsha stinky tofu mobile dining car is parked at one end of Wenxing Street), but Shaoxing stinky tofu is also very popular in Jiangsu, Zhejiang and Shanghai. Under the superfluous embellishment, the golden appearance of tofu can't be seen clearly, and the sauce quickly erodes and softens the crispy skin, partially drowning the "soul" endowed by the stinky amaranth stalk.
But then again, authentic and delicious are two different things. Qi Fei smells musty and garlic. The strong taste penetrates the mouth, and the stimulation and sweetness of onion and coriander ripple at the chewing place. No wonder it is still notorious for its "stink" in the night market of Normal University, which is full of fragrance.
There are several places that serve fried tripe, but we didn't find anything that all mankind are pushing, so we visited Cui Ji in old Beijing and complained bitterly. The big red house was very eye-catching.
