What is Kudicai?

Kudicai, a wild bitter vegetable, has white juice and a slightly bitter taste. It can be harvested with 3-4 leaves. It tastes great when eaten raw with dipping sauce. The method is as follows:

Materials:

1 red bell pepper, 1 yellow bell pepper, 1 orange bell pepper, 1 green bell pepper, 1 green courgette (i.e. cucumber), 1 small round eggplant, 6 minced garlic, 3 tablespoons of olive oil, 1 tablespoon of lemon juice, a little fresh thyme, and an appropriate amount of salad dishes.

Method:

(4) Mix minced garlic, olive oil, lemon juice, herbs and chopped bell peppers and other vegetables, and marinate for about 30 minutes.

(5) Roast the vegetables in a pan. If you like, sprinkle with coarse salt and crushed black pepper.

(6) Place the roasted vegetables on the plate, add salad, and enjoy.

Tips:

For vegetables used for grilling, it is suitable to choose types with high moisture content. After such vegetables are roasted, the water will not be completely evaporated, and the water will be retained and the taste will be different. Better.
