Cockfighting is one of several famous foods in Kaifeng. Speaking of cockfighting, we must first talk about Ma Yuxing, a century-old shop in Kaifeng. Ma Yuxing now has his stores in many places in China. You may be familiar with this name. But when it comes to its full name "Jinling School-Ma Yuxing", few people know it.

From its name, we know that Ma Yuxing was not born and raised in Kaifeng. Ma Yuxing was founded by Ma Yongcen, whose family was originally a Hui nationality in Yunnan. This is a distinguished family. During the reign of Shunzhi in Qing Dynasty, Wu Sangui invaded Yunnan, which greatly affected the Ma family. So he moved to Jinling (now Nanjing) and opened the firm "Chunhui Hall". During the Xianfeng period, due to the struggle between the Taiping Army and the Qing court, the business name opened in Kaifeng at that time was "Yu Shengyong", which mainly engaged in north-south food. In view of the abundant chicken in the Central Plains, Ma Yongcen painstakingly studied the processing method of Nanjing duck products, using hens as raw materials to make a new variety-"fighting chicken". It was very popular then. In the third year of Tongzhi (1864), Ma Yongcen opened a new shop named "Jinling School-Ma Yuxing". The sect professed that it believed in Islam. Times have changed, and now the practice of cockfighting has long been known to Kaifeng merchants. The cockfighting in some shops is no worse than that of Ma Yuxing.
