1. 3. Mix 2 grams of baking soda and 20 grams of water into soda water, add it into the dough bit by bit, and knead evenly. Ferment until doubled again, press out the air inside, and the dough sticks are ready.
4. Dip your hands and rolling pin with oil, and roll the dough into a rectangle about half a centimeter thick and suitable length. (It should not be too thin or too thin, otherwise the dough sticks will not be able to form holes)
5. Pour half a pot of oil into the pot and heat it over medium heat. Dip your hands in oil, cut the dough into two-finger-wide sections, dip your hands in oil, stack one section on top of the other, apply oil on the chopsticks, and press down from the middle to make a dough stick embryo.
6. When the oil is 70% hot, pull the dough sticks into a suitable length and put them into the pot for frying. After five or six seconds of waiting for the fried dough sticks to float, gently turn the fried dough sticks over from one side (remember: do not use chopsticks to flip the fried dough sticks). When the fried dough sticks are basically set, turn them frequently. The fried dough sticks will swell to a large size and become beautiful in color. Then you can take it out, drain the oil and enjoy!
