Is the hairy egg delicious? How come?

"Compendium of Materia Medica" records: "Chicken embryo eggs have the function of treating headache, migraine, head wind and limb wind." Chicken embryo has good nutritional value and is rich in minerals and vitamins, which is higher than ordinary eggs. It can improve selenium deficiency and has anti-aging effect.

Seeing a friend drying eggs in PO aroused my interest. There is a controversy about dried eggs. Some areas think that dried eggs are nutritious and nourishing, while others don't eat dried eggs at all, thinking that dried eggs are too dirty.

Hairy eggs have many names, such as eggs, prosperous eggs, live beads and hairy eggs. Jiangsu and Zhejiang provinces are also called happy eggs.

What exactly is a hairy egg? In fact, it is not pleasant to say, that is, eggs containing fertilized eggs are hatching, or chicken embryos are dead.

Hairy eggs basically have three states, which are called in the north:

"All-water eggs", that is, eggs that have not hatched at all and have no chicken appearance, look not much different from ordinary boiled eggs, but they are generally blue-yellow in color, taste harder than steamed eggs, and have fermented fragrance or bad smell.

"Half-flowered egg" is a kind of half-hatched egg, which is half chicken's body and half ordinary egg. It tastes moderate and is a transitional state.

"Hundred Flowers Egg" is completely in the form of a chicken. When this kind of egg is peeled off, it will shed a lot of juicy or smelly juice. The bones of the chicken legs that are not hatched are very soft.

At present, most of the hairy eggs on the market are "bad guys" who failed to hatch in chicken farm incubators. If they throw away pure waste, some people will buy them and make them. The other part is semi-hatched eggs that are produced on a large scale in areas where consumption is relatively concentrated and are purely used to make hairy eggs.

Hairy egg is a veritable dark food, which many people avoid, but people who like it regard it as delicious food. But let's get rid of the smell of the hairy eggs first, and we won't discuss it. From a nutritional point of view, is eating hairy eggs nutritious?

Hairy eggs, also called "stillborn eggs", are eggs that have not hatched successfully. Hairy eggs usually come from two sources: one is that the embryo development stops due to temperature, humidity or bacterial infection within 14-2 1 day when chicks hatch. Another man intervened to terminate the hatching of the chicken in advance and then make it into food.

Hairy eggs do have some nutrition, but they are not much richer than ordinary fresh eggs.

For example, it has been found that the protein content of chicken embryos hatched for 10- 19 days only increases by about 1% compared with fresh eggs. Other nutrients (such as fat, vitamins and minerals) will also undergo a series of changes during embryonic development, some will increase, some will decrease, and will tend to be stable at some stages, but they are still not comparable to fresh eggs in general.

More importantly, if the eggshell of a hairy egg is broken, it will be more susceptible to bacterial pollution and it will be difficult to ensure hygiene and safety.

Some studies have detected the infection rates of bacteria and salmonella in the eggshell surface and egg contents of food eggs, as well as in the liver, intestine and yolk sac of intact and damaged eggs. The results showed that the detection rate of Salmonella in food eggs was low. The detection rate of Salmonella in hairy eggs is high, and the detection rate of Salmonella in broken-shell hairy eggs is obviously higher than that in intact ones.
