Prepare the ingredients: about a pound of razor clams, a handful of spring onions, an appropriate amount of fresh soy sauce, ginger slices, dried chili peels, and pepper oil

Method

Wash the razor clams you bought several times to remove the sediment. Then add salt and an iron tool to the water and let the razor clams spit out the sediment.

2. Put the spitted razor clams into the pot, without adding water, add ginger slices and cooking wine and cook until the razor clams open, turn off the heat and take them out. The original soup for cooking razor clams is clarified and set aside.

3. Take out the razor clam meat and remove the layer of yarn on the edge of the razor clam. If you feel that the razor clams are not too clean, you can use clarified razor clam soup to clean them.

4. Cut the green onions into sections and mix them with the razor clam meat, pour a layer of fresh soy sauce and sprinkle with dried chili peel. Heat the peppercorn oil in a pot, pour the oil on the razor clams while it's still hot, and take a plate to cover the razor clams. Simmer for two or three minutes to allow the aroma of pepper oil to fully enter the razor clams before opening the lid and eating.

Operation points for mixing shallots with razor clams:

Razor clams are delicious, but they mainly have a fishy smell and a lot of sand. If not handled well, they can easily become unpleasant and smell fishy. Therefore, the yarn of razor clams must be removed. The reason why iron tools are placed when spitting sand is because razor clams hate the smell of rust, so they are prone to spitting sand.

Because razor clams themselves contain a lot of water, there is no need to add water when cooking. Keep the original soup to clean the razor clam meat, which can preserve the freshness of the razor clams.

When cooking razor clams, add a few more slices of ginger and pour some cooking wine to remove the coldness of the razor clams and effectively remove the fishy smell. If you like, you can add some Sichuan peppercorns to make it easier to remove the fishy smell when cooked together.
