1. Noodles: One of the eight weird things in Shaanxi is like this. The noodles look like trouser belts. Biangbiang noodles, oil noodles, saozi noodles, flag flower noodles, soup noodles, fried noodles, dipping noodles, slurry noodles, rolled noodles, etc., there are countless types, it all depends on how you want to eat it.

Similar to pot helmets are stone steamed buns. Stone buns are steamed buns made by using heated stones as cooking utensils. It is crispy, salty and durable, so it is very popular among people and is more of a snack.

What I have to mention is the Roujiamo. Use the pancakes freshly baked from the pan, sandwich the stewed meat with flavor, pour a spoonful of soup on it, and take a bite. 3. Mutton and Beef Steamed Bun

There is an interesting legend behind the fame of Xi’an Beef and Mutton Steamed Bun. According to legend, when Song Taizu Zhao Kuangyin failed to succeed, he lived in poverty and wandered on the streets of Chang'an (today's Xi'an City). One day, there were only two dry buns left on me, which were too dry and hard to swallow. It happened that there was a mutton shop cooking mutton on the roadside, so he went to ask for a bowl of mutton soup so that he could soak the buns until soft before eating. Seeing how pitiful he was, the shopkeeper asked him to break the buns into pieces and pour a ladle of hot mutton soup over them. Zhao Kuangyin took the soaked steamed buns and started eating them. His whole body became hot, his head sweated, and his hunger and cold disappeared. This is the predecessor of Paomo. Su Dongpo, a great writer in the Northern Song Dynasty, once wrote a hymn in praise of "Long cuisine has bear wax, and Qin cuisine only has yokan".

There are three traditional methods. One is "dry soaking". By boiling, the soup is completely absorbed into the steamed bun. This steamed bun is tough, sticky and slippery; the second is called "mouth soup", the cooked steamed bun is crispy and smooth, and a mouthful of soup remains in the bowl after eating; the third is called "water surrounding the city". The steamed buns are cooked in a wide soup. The bowl is surrounded by soup and the steamed buns are in the middle. The soup is rich and the steamed buns are scattered, fragrant and smooth.
