Why do broad beans have "ears"?

That’s the germ of broad beans

Bava beans are relatively large seeds with a strong seed coat on the outside. When the seed coat is peeled off, there is a pair of thick bean petals inside, which are called Cotyledons, cotyledons contain rich nutrients for the growth of seedlings when the seeds germinate.

There is a very small bud at the base of the two cotyledons, called a germ. The outer end of the germ is followed by a curved part, like a small tail, which is called the radicle. When broad beans germinate, the radicle first breaks through the seed coat and extends downward into the soil to fix its position. Then the embryo drills out from between the two cotyledons and exposes the top, becoming a young bean sprout. However, the cotyledons remain in the soil until the nutrients are consumed before disintegrating.
