One is that Zhu Yuanzhang's family was poor when he was a child. When he was in grinding bean curd, he drove the cattle to a rich family, and a long-term laborer pitied him, so he often stole some tofu for him to eat until his parents died and he became a monk. On one occasion, he was delayed for a few days because he was busy with the temple fair. When he came back, he took out tofu from the haystack, which had a layer of white hair on it, but he was too frugal to throw it away. He fried tofu and ate it. Who thinks it's delicious? Some versions of this legend believe that Zhu Yuanzhang was defeated and fled to Huizhou. When the people fled, he was hungry and ate long-haired tofu hidden in the haystack. But when it comes to becoming an emperor later, he often asks the chef to make him hairy tofu. There is no difference between the two versions.

Another legend is that once upon a time, there was a tofu mill in Beijing, and its products were particularly good, which was on the imperial diet list. At that time, there was a champion named Sun Jiading in Anhui, and he also presented a pair of couplets to this tofu shop, embedding the name of Wang Zhihe who invented hairy tofu in the couplets. This Wang Zhihe is a juren at the foot of Huangshan Mountain. At that time, I took the imperial examination and failed repeatedly. Finally, he simply gave up going to Beijing to catch the exam and concentrated on running the family-owned tofu business.

He had to spread the leftover tofu on the straw mat and sprinkle it with salt water, in order to prepare food and hope to prolong the storage time. Three days later, the tofu became sticky and grew long fluff. Wang Zhihe wanted to throw them away, but they smelled a little fragrant, so he dared to fry them and dip them in Chili, and the result was very delicious. So it was grandly launched in the tofu mill and was loved by neighbors. Finally, it became more and more popular.

Only the cheeks are still red, the scales have not fallen off, and the fish has not deteriorated. Instead, it has become a fragrant and smelly mandarin fish.
