The practice of cat ears

1. Prepare two bowls, each with 250g flour, a bowl of brown sugar water and a bowl of milk; Dissolve brown sugar in 120ml warm water, stir well and pour into one bowl, and add 120ml milk and a little sugar into the other bowl;

2. Knead two bowls of dough into smooth dough, cover the dough with a layer of wet cloth and let it stand for 20 minutes;

After the two doughs wake up, sprinkle a little flour on the chopping board, take out the dough, roll the white dough into thin slices, and roll the brown sugar dough into the same size as the white dough. You can sprinkle a little water on one side of the white dough, put the red dough on the white dough and gently roll it out with a rolling pin. When rolling, it should be compacted.

4. Put the rolled dough in the refrigerator 1 hour, take it out and cut it into small slices. Make it as thin as possible at home.

5. Burn the oil in the pot, and put it into the cat's ear to fry when the oil temperature is eight layers hot; Slowly fry the whole process with low fire, the oil temperature should not be too high, and don't move when you just put it down. Turn the shape slightly with chopsticks, fry until golden brown and crisp, and remove and drain the oil; Fried cat ears are brittle. When a cat's ear is fried at high temperature, it will arch a little in the middle, just like a cat's ear.
