This year's "National Day", I returned to my hometown in Henan and had an authentic Luoyang water mat for the first time.

Luoyang water mat is a famous dish in Henan province with a history of 1000 years. Because it is mainly soup, eating a plate is like running water, so it is called "water mat". There are twenty-four plates in the water cushion. Eight cold drinks (four meats and four vegetables) are served first, and then sixteen hot dishes are served. Every three dishes taste similar to each other as a group. Each group has a big dish collar and two small dishes, which is called "taking the court". The first dish in the "water mat" is shredded radish, which is called "swallow dish" because it tastes like bird's nest. The fourth course is beet or sweet soup, and the last course is hot and sour egg soup called "Fujian soup", which means that all the dishes are served. I like the fourth sweet soup best. I ate a "water mat" and my stomach was full of soup.

Luoyang water mat is not only popular at grand banquets, but also at folk weddings, funerals, birthdays and festivals. As a traditional food culture, it is also known as the three wonders of Luoyang with the traditional Peony Festival and the ancient Longmen Grottoes.
