After Yinchuan left the station, the burning sun "evaporated" all the people on the street, and it was really impossible to resist the heat flow outdoors. I ordered a drip, hoping to "catch a live one", inquire about the special vegetable soup of this strange city, and enjoy the coolness of air conditioning. When I got on the bus, I made it clear to the driver. As soon as I opened my mouth, I knew that this "monkey" was caught by the way. As soon as I heard it, I knew it was an old local gun. The driver's surname is Qin, and his name is Master Qin. As soon as Master Qin opened his mouth, he said in a storytelling tone: If you want to talk about this authentic food in Yinchuan, please listen to me slowly. Listen carefully ... so he slowed down and talked about it.
Master Qin is from Shandong. He stayed in Yinchuan for 3 1 year, witnessed the development of the city and ate all over the streets. I wonder how many restaurants have closed down. It must be an authentic feature that a meal can go down its mouth for more than 30 years without being washed away.
What impressed Master Qin most was a nameless ramen restaurant. It was said that it was nameless because it had never hung any brand name for more than 30 years (although there was no brand name, people orally passed a name according to the place name and searched on the map for: red thunder beef noodles with clear soup). This shop only opens from 6 am to noon 1 1 every day, and closes at that time. I haven't closed the door since Master Qin came to Ning, from ten cents to fifty cents ... to five dollars a bowl now, which is an authentic old shop. There was a long line of 10 people, but it was finished in less than three minutes, as shown in Figure 2. Noodles look clear as water, but they taste good. There is also a special food from Master Qin's mouth, one of which is stew (the name of the store has been forgotten), as shown in Figure 3 below.
In Ningming, it is called stew, which is actually similar to Guizhou mutton powder, but the two are reversed. The stew is mainly mutton, with a small amount of rice flour and soup as the essence. The mutton is tender and has a strong mutton flavor (not mutton flavor). The most classic is the prepared flour cake (Figure 4), which is made of pure white flour. Dry eating is a bit tough, but if you unscrew a piece and soak it in the stew for a few seconds, it will melt in your mouth. The whole cake will melt in your mouth, just like a mouthful of snow in your mouth, spreading rapidly, and the aroma of noodles and the delicious soup will occupy your mouth. According to Master Qin, another way to eat is to stir-fry half a catty of stew and a bowl of rice, which is another experience. Because of the time, it is a pity to eat only the former.
Secondly, Aye Mutton Za (Qianjin Street Store, Figure 5) Yinchuan is a good place to eat mutton. The mutton in Ningxia is different from other places, the biggest feature is fresh and tender, and the mutton has a strong flavor. It is not as hard and thick as Urumqi's "masculine flavor", but it has a "feminine flavor" of softness and lingering. Mutton offal All kinds of mutton offal are combined in a bowl (Figure 6), and the taste is strong and changeable. You need to eat big and enjoy it carefully.
The third is roast mutton, a big yard in Huaiyuan market, where there are places to eat everywhere at night. After a hot day, sitting in the square, ordering a few skewers of roast lamb chops, roast mutton and roast lamb loin, and adding one or two bottles of frozen Xixia beer (Figure 7), blowing a cool breeze, slowly ending the fatigue of the day.
This morning, Master Qin sent me recommended old shops on WeChat, such as Old Papaya Noodles (Jacky Store) and Chen Yi Paomo Restaurant. Because of the tight schedule, they didn't go to the wine tasting. Unfortunately, they are used to make up for it. Next time you come, just leave a reason.
Meeting someone like Master Qin is an unknown surprise during the trip. Looking for authentic local characteristics, you have to meet such an old runner, and meeting is fate. Master Qin said that he likes to enjoy food and is interested in history and culture. China's traditional classic collections are all involved.
