3. Hot oil in cold pot, medium fire. When the oil temperature is 70% hot, turn off the heat and slowly pour in the egg mixture. After the bottom surface is solidified, slowly roll it in along one side, then fold the left and right sides in the middle, and then turn the whole egg surface over until both sides are fried yellow, and then you can go out.
