On the "Lock Throat" of Rock Tea

I recently took a sip of rock tea somewhere, and after swallowing it, I felt my throat dry and tight. Because I was not familiar with it, I asked if the tea was quenched too fast with a tone of inquiry. The tea owner replied: this tea has been used for more than ten years, and there is no such problem. It should be my own constitution.

Although I am a tea drinker, I still dare not judge the profound rock tea easily. But according to my experience, a good cup of rock tea won't feel this way. But in other people's land, respect others and don't talk nonsense, so I am silent.

I really fell in love with tea after I came back, and my personality was a little obsessed. When I don't understand a problem, I'm always uncomfortable.

Also with the purpose of learning, I will ask for information in many ways after I come back. At the same time, I consulted my mentor and friend Tianya Xiong, and it has been verified elsewhere.

Good rock tea doesn't feel like a throat lock. If it is new rock tea, the baking fire is too urgent, and the tea itself will get angry, some people with hot constitution will really feel thirsty. But for the old rock tea, there is no such thing.

In addition, the evaluation standard of rock tea has never been defined from the year. The market always says that this is rock tea or decades of old slaves, and most of them are business models set for market demand. It has nothing to do with the tea itself.

At the same time, we know that the preservation of tea can't be slack. It is not easy to have good tea, and it is even more difficult to save it. My tea has been in moistureproof box for almost 24 hours, and I never dare to neglect it. I have also been to Tianya Ge's teahouse. When the weather is wet, the pump will be turned on and will never stop for 24 hours.

So tea friends often say that my tea is delicious. How can it taste bad after a few years?

First of all, this storage is for Pu 'er tea and black tea. Other developments are too long, so I will leave them alone for the time being. First of all, it must be improper storage, which leads to the deterioration of tea industry due to moisture, so the taste is worse. Secondly, improper storage may have caused the tea industry to absorb other odors. But there is another exception to raw tea, which is its change. Some raw teas do taste worse after being stored for three or four years, but they will be wonderful after being stored for another year or two.

Okay, about storage, it's not expanded. Let's go back to Rock Tea.

"Rock tea" has a dry throat and a locked throat, mainly for the following reasons:

The new tea is baking too fast. Under normal circumstances, good rock tea needs to be baked slowly and repeatedly. After baking a fire, you need to leave it for a few days until the internal heat dissipates, then bake it, and then put it back and bake it. This can lock the aroma in the tea, unlike ordinary rock tea, which has a high aroma once or twice, but it spreads quickly. In order to make the aroma worse, some merchants often use the method of quick baking and fire, so that the aroma can be quickly improved and the products can be produced quickly. Business society is also understandable. But it is absolutely impossible to make good rock tea.

Of course, for the old rock tea, there is no case of re-baking and getting angry.

So let's see why the old rock tea locks its throat.

Simply put, it is Shan Ye.

For example, just like people, they are congenitally deficient. Most of this kind of tea, soil conditions, sunshine and tree species themselves are not very good. Therefore, even if it is stored for a hundred years, it will not change the congenital harsh conditions. The transformation is aimed at the good tea base, and there is no way to transform and store the tea with congenital deficiency.

Even if it is a good mountain, a good tree species and good picking, all processes meet the standards. However, during storage, if the taste is lost and the tide is absorbed, the throat will be dry. So don't always be deceived by the year. It's not just the year that determines good tea.

I tasted a so-called peerless tea at Tianya brother's place before. It was made in the 80 s, and the price was scary. But after the two of us drank it, the taste disappeared after several times, and the degree of mellowness was impossible to talk about. Therefore, drinking tea is not for all kinds of gimmicks. It's what local tyrants do. If you really love tea, please make a detour.

All right. Rock tea lock throat is probably like this. But for learning, I never dare to be careless, let alone be fooled.

I once again consulted Dr. Cai, a postdoctoral fellow in tea science at China Academy of Social Sciences. After listening to my description, she told me what Mr. Ye Tongqi said. Ye is the inheritor of the first intangible cultural heritage of China Rock Tea. Committed to the research of rock tea all his life, he can be said to be a leader in the field of rock tea. Ye Lao said that the best rock tea, no matter how roasted, pays attention to the word "live" in its throat rhyme.

When the fire is roasted, the tea will die, and there will be no throat rhyme. Tea is not "alive", and the voice is naturally bad.

But the same tea, why do some people feel dry mouth and tight throat? This is because everyone has different oral sensitivity and belongs to people with extremely sensitive taste.

Write so much, not to attack anyone, nor to show off. Because I really love tea, I also love people who love tea.

I hope that people who really love tea can study and study deeply with piety and humility. Tea is a plant, and there is no dispute.

The same should be true for tea drinkers, not to be competitive or to show off their skills, but to strive to improve themselves and be a tea drinker who respects tea, cherishes love and spreads the correct concept of drinking tea.
