What are the four levels of yam granule processing?

The four levels of yam granule processing are peeling, dehydration, sun-drying, trimming and washing.

1. Peeling: Before peeling, first wash the yam. Plan the skin thoroughly, use a bamboo knife, and cut the meat as little as possible to increase the dryness rate.

2. Dehydration: The fumigated yam must be pressed with water for 3 to 4 weeks. The pressure is generally 50kg to 75kg of stones per large tank. If the pressure is too small, it will not have the effect of dehydration. If the pressure is too high, the yam will be easily flattened and cracked, which will reduce the marketability.

3. Sun-drying: The rounded yam can be dried in the sun. It usually takes 5 to 7 days to dry. When drying, tie the big head of the yam with a rope and hang it on a bamboo pole to cool it in the sun to keep the dried yam in a cylindrical shape.

4. Trimming and scrubbing: Remove disease spots and remaining epidermis through trimming. The purpose of washing is to remove the dirt attached to the surface of the dried yam, making it white both inside and outside, and finally packages it for sale.
