The origin of Qingming cake

Legend has it that at the end of the Qing Dynasty, a woman named Zoe in Zhengyi Town found that a kind of wheat straw sauce was a good raw material for making Qingming cake green juice, while the jiaozi made by hand grinding was softer and more delicate, not sticky, and did not break, harden or change color after being stored for several days. Later, Grandma Chen, a Zoe bakery in the south of Zhongqiao in Zhengyi Town, learned the secret recipe. Since then, Qingming cake has been supplied to the market, becoming a snack with full color, flavor and local characteristics.

Qingming cake is a special food in Wenzhou, also known as Qingming dumplings, noodle cakes, Qingming fruits, green dumplings and so on. Before Tomb-Sweeping Day, every household in urban and rural areas grinded glutinous rice flour to make cakes with pork, shredded bamboo shoots and the like, or embedded with sweet sugar, commonly known as "Qingming Cake". Qingming cake is green as jade, waxy and soft, fragrant, sweet but not greasy, fat but not greasy. It is a kind of food used by Jiangnan people to sacrifice their ancestors and has been passed down to this day.
