What is the significance of watermelon flowering?

It refers to the sand pulp watermelon. Watermelon with sand pulp has relatively little water. The edible part of watermelon is mainly placenta, which consists of a large number of parenchyma cells. During the ripening of watermelon, these cells gradually expand and accumulate water and sugar in the internal vacuole. The "sand grains" we see are actually extremely swollen cells. When cells are expanding, due to the action of enzymes, the adhesion between cells gradually weakens, making the pulp loose. At the same time, due to the decrease of water content after ripening, the cells are further dispersed and even cavities are produced, which is why we see watermelon with sand pulp, that is, watermelon is chapped.
