1, different temperatures:

The cold pressing method is generally processed at an environment below 60℃. In order to improve the quality of cold pressed oil, the raw materials of cold pressed oil generally need to be carefully selected. Cold pressed oil has low oil temperature, low acid value and high quality.

Before cooking and pressing oil, oil is heated at high temperature, which causes a series of changes in oil, such as destroying oil cells, promoting protein denaturation and reducing oil viscosity.

2, the process is different:

Hot pressing, also called cooked pressing in some places, is a common oil pressing process, which is suitable for pressing to extract oil and improve oil yield.

Cold pressing method, also known as green pressing method, refers to an oil pressing process in which oil is sent to an oil press for low-temperature pressing without heating or slightly heating before pressing.

3. Different oils:

Cold-pressed refined oil retains the natural flavor and color of the oil, completely preserves the nutrients in the oil, and has a low degree of protein denaturation, so it is easier to be comprehensively utilized in protein. Generally speaking, the smoke point of cold pressed oil is low, it is not easy to pollute the pot, and the color is clearer and better than that of hot pressed oil. But the cold-pressed oil has not been steamed and fried. The moisture in oil is unstable, which is not conducive to long-term storage. Secondly, the fragrance of oil is not as strong as that of hot pressed oil. If hot pressed oil is "fragrant", then cold pressed oil is "fragrant".

Hot pressing technology is to heat the oil and then press it. This kind of squeezing method can be squeezed clean at one time, and the oil cake contains almost no oil, so the oil cake is completely deoiled and can be used when making oil-free cakes. The advantage of hot pressing is that the pressed oil is fragrant, and the oil after hot pressing is more oily than that after cold pressing, but its process destroys oil cells and promotes protein denaturation.

Cold pressed oil has natural characteristics, which avoids the adverse effects of traditional high-temperature pressed oil processing. Cold-pressed booth refined oil retains the natural flavor and color of the oil, and the physiologically active substances in the oil are intact (vitamin E has anti-aging effect, sterol has skin beautifying effect and enhances human metabolism function), and the original juice of cold-pressed oil is preserved.
