Pingle's most famous dish is called pomelo peel brewing, which is made of Shatian pomelo peel produced locally. The key to brewing pomelo peel is the treatment of pomelo peel. First, peel off the green peel of grapefruit with a knife, leaving a white spongy inner layer. Then, put it in water to boil, take it out after boiling, soak it in cold water for 3-4 hours, then squeeze out the bitter water from the grapefruit peel and soak it in clear water.

This step is repeated 7-8 times until the extruded water becomes colorless and transparent. Squeeze the pomelo peel dry, cut it into squares or triangles about 6 cm wide, cut a hole in the middle, fill in the mixed stuffing, smooth it, and the pomelo peel will be brewed. Then add garlic, shredded ginger, dried peppers and so on. Put into the pot, stir-fry with oil, pour the brewed pomelo peel into the pot, stew with soy sauce and water, and take it out after slow fire 10 minutes.

The aroma of pomelo peel and the taste of filling blend together, and this dish is deeply loved by Pingle people.

Snail brewing is also one of the "eighteen brews". First, put the bought snails in clean water for 2-3 days, and let them spit out all the sediment in their stomachs. Wash the snail, cook it in a pot, take out the snail meat, and chop it with pork and mint. Adjust the taste and stuff it into the snail shell.

Heat an oil pan, add sour pepper and sour bamboo shoots, stir fry, pour the snail stew into the pan and stir fry for 1-2 minutes, then simmer for about 15 minutes, and then take out the pan and plate.

Bean sprout is the most time-consuming and troublesome dish in the "Eighteen Brews". There are two ways to do this: first, hollow out the bean sprouts vertically with an embroidery needle, then fill in the chopped stuffing of chicken, and then stir-fry in chicken oil. The second is to take fresh bean sprouts, boil them in water until they are soft, put about 20 together, tie them with a leek at both ends, then put the chopped meat into the bean sprouts and cook them in a soup pot.
