The origin of Lamian Noodles

Lamian Noodles originated in China. In the late Qing Dynasty, Xue Baozhan, a native of Shaanxi, wrote A Brief History of Vegetarianism, saying that a kind of "real noodles" popular in Shaanxi and Shanxi was produced in Pingding, Yangquan, Chaoyi and Tongzhou in Shaanxi. Thin as leek and thin as vermicelli, it can be made into triangular prism or hollow shape, resistant to continuous cooking, soft and tough. This surface is now Lamian Noodles, Shanxi. Lamian Noodles can be steamed, boiled, fried, fried and fried, each with its own flavor.
