2. Mousse: Wash strawberries, remove pedicels, take 400g and mash them with a blender for later use. The remaining half of strawberries are used to decorate one side of the sandwich (cut in half), and the other half is sliced to decorate the cake surface. Put gelatin into milk and stir, then heat the milk, add 90g sugar, stir until gelatin and sugar are completely dissolved, and turn off the fire. Add 2 egg yolks and stir well, then add lemon juice and wine and stir well. Beat the whipped cream to 70-80% foam (it doesn't need to be very stiff, just it is almost solid), add strawberry jam and stir well, then pour in gelatin paste and stir well.
3. Remove the bottom of the 8-inch stripper, put the frame on a big plate or cardboard, first spread a layer of cake slices, then arrange a circle of strawberries cut in half (as shown in figure C), inject mousse stuffing (as shown in figure D), then cover with a layer of cake slices, compact, decorate the sliced strawberries on the cake surface, brush with a layer of pectin (as shown in figure E), and finally put them in the refrigerator for at least 3 hours before slicing and eating. 1. If you buy flaky gelatine, you need about 7~8 pieces of mousse stuffing. If you use the same mixing head, you should pay attention to cleaning and drying the mixing head after beating the egg yolk, otherwise the oil in the egg yolk will affect the transportation of protein.
2. Pectin can be replaced by apricot jam, as long as it is heated slightly or melted with a little hot water.
3. If you want to make a cake with two layers of mousse stuffing, you can change the decoration mode of strawberry sandwich, reduce the height, use only half of mousse stuffing, and let the other half of mousse sandwich another layer to become a cake-> Mousse->; Cake->; Mousse, when the ice hardens, do the same strawberry decoration on the surface.
Because Wendy doesn't have a special hollow mold for mousse, this is a difficult version of mousse cake. If you have a special hollow mold, you certainly don't need to use an 8-inch demoulding mold.
5. When the cake is to be demoulded, you can apply a hot towel to the frame of the baking mold, so that the contact between the mousse and the frame is slightly loose, and the frame can be taken out smoothly. (If you turn it slightly, you can open the buckle on the side and take out the frame. If you use a mousse hollow mold, you can easily take out the mold after hot compress. Because the cake is not easy to move after it is made, it is best to make it directly on a large plate or cardboard, which is convenient for moving and eating.
6. Friends who like hurricane cake can use my hurricane cake recipe to modify it into a formula of three eggs. Qifeng cake will have a flat edge after cutting. Please adjust the amount of lemon juice in Musley according to your needs. If the strawberry is sour, you can omit it.
